Ingredients:
800g chicken breast or 1 pack of firm Tofu
200g sugar snap peas
400ml coconut milk
300g pad Thai noodles
2 tbsp red curry paste or laksa paste
1 lime (juiced)
1 tbsp fish sauce
1 tbsp brown sugar
1 tbsp peanut oil or vegetable oil
Optional extras to really give your meal an edge:
Fresh cilantro/coriander leaves
Lime wedges
Chopped spring onions or bean sprouts
Sliced red chilies (remove seeds if you don't like too much spice)
Dried onions or chopped cashews
1 boiled egg cut in half
Instructions:
1. Cook the pad Thai noodles according to package instructions, then drain and set aside.
2. In a large pot, heat the coconut milk over medium heat and add the red curry paste. Stir until fragrant.
3. Add the chicken breast, sugar snap peas, fish sauce, brown sugar, and lime juice to the pot. Simmer for about 15 minutes or until the chicken is cooked through.
4. In a separate pan, heat some oil and stir-fry the cooked pad Thai noodles until heated through.
5. Serve the laksa in bowls, topped with the stir-fried pad Thai noodles, cilantro/coriander leaves, spring onions, lime wedges, and sliced red chilies. See all optional extra's above.
