Hoisin Minced Pork Stir-Fry with Rainbow Veggies

Feeling a bit run down and in need of some energy mid week? Try our tasty Hoisin Minced Pork stir-fry bursting with vibrant, colorful veggies to bring some zest into your life.
Grab your wok or large frying pan and get cooking!

Ingredients (for 4-5 people)
1 red onion diced
2-3 garlic cloves diced
Peanut oil, 2 tablespoons
Pork Mince 500g
2 carrots diced or shredded
1/2 small purple cabbage
Any greens, 2 cups (spinach, broccoli, peas, mangetout, bok choy and kale are all great) The more the merrier, but 1 or 2 green options is fantastic.
Sweetcorn kernels, 1 cup
Hoisin Sauce, 3 tablespoons
Sweet Chilli Sauce, 3 tablespoons
Soy Sauce, 2 tablespoons
Fish sauce, 1 teaspoon
Noddle's or Jasmine Rice
Cashews, 1 cup
Coriander (fresh) to serve

Instructions:
Chop up and finely dice the red onion and garlic, and lightly fry in the wok or large frying pan in peanut oil.
Chuck in the minced pork, breaking it up and mixing well.
Once mince is looking lightly cooked, add the diced or shredded carrot.
Add the hoisin sauce, sweet chilli sauce, soy and fish sauce, mix and allow to simmer.
Once meat looks almost cooked, add the green veggies, cabbage and sweetcorn.
Mix well and allow all ingredients to simmer and cook together.
Taste once cooked. Add extra soy sauce, sweet chilli sauce and hoisin if desired.
Serve on a bed of noddle's or Jasmin rice.
Add some cashew nuts, peanuts or chopped almonds on top with a little fresh coriander if desired.
Hint: You shouldn't need to add stock or extra salt due to the high salt content in the sauces but do add extra if you prefer.
