My Go-To Breakfast - Avocado with Cheesy Scrambled Eggs on Sourdough Toast.

The avocado on toast debate rages on. Way back in 2016, a journalist in Australia sent the internet into a spin when he suggested that all young people are lazy and wasteful with their money. If they just negate to eat avocado's on toast, perhaps then, they can afford to buy a house, he pondered.
What this older gentleman failed to acknowledge was the world is not how it was for him when he purchased his first house in the 1970's.
After gaining his free degree, and securing a good job with good prospects, thanks to his university education, he was likely able to secure a home quite easily in a cool urban suburb. Houses in the 1970's typically cost around four times the annual salary.
Contrast that to today, in 2024, and our young are battling a severe lack of housing availability, houses costing around 8.5 times the annual salary and to add to the property misery, many jobs are casual with little idea of how many hours they will be given from one week to the next. Zero hour contracts anyone?
A far cry from the ''jobs for life'' and free education that so many before them could experience. For the more fortunate kids with a qualification (that's actually in demand) behind them, they face a highly competitive world, battling through 3 or 4 interviews (common place these days) before they may be lucky enough to snap up a role.
And yes, dear reader, these are the thoughts I have as I cut up my avocado.
What a troublesome fruit it must be to cause such societal chaos!
Blame a breakfast trend, don't dare blame the mismanagement of economics, greedy banks, and corrupt policies over the last 40 years.
So in honour of the rogue that is the avocado, let us enjoy a little green goodness together...
Ingredients: Serves 2 people.
2 eggs
Splash of milk
Salt and pepper to season
1 cup Parmesan cheese (grated)
Tsp on olive oil
1 Avocado sliced
Sourdough bread, toasted
Butter
Method:
Add a little oil to a small fry pan, crack in 2 eggs, with a little salt, a little milk and 1 cup of grated parmesan cheese. Whisk the mixture until fluffy and cooked.
Set aside and pop in the slices of toast to be toasted. Spread butter once the toast is cooked.
Slice up an avocado and add to the top of the scrambled eggs. Sprinkle some black pepper to taste.
