Hands up who needs a new salad in their rotation? I am unashamedly always on the look out for fresh new ideas! I can't get enough of this amazing salad.
It's perfect for a BBQ or a healthy lunch when I need something light in this heat. Can somebody tell Perth it's now late March?! So hot outside...phew!
This vibrant and flavourful salad balances sweet, tangy, and nutty flavors for a truly gourmet experience. Featuring pomegranate seeds, toasted walnuts, and creamy goat’s cheese, it is elevated by a luscious dressing made with our stores awesome Bourbon Maple Splash Balsamic Vinegar and extra virgin olive oil.

Grab these simple ingredients and let's do this...
Ingredients:
4 cups mixed salad greens (baby spinach, rocket, and/or romaine)
½ cup pomegranate seeds
½ cup walnuts, toasted and roughly chopped (pecans are a good alternative)
100g goat’s cheese, crumbled (or a creamy feta works)
2 tbsp extra virgin olive oil with lemon myrtle (from our shop)
1 ½ tbsp Bourbon Maple Syrup Balsamic Vinegar (from our shop)
Salt & black pepper to taste
Chopped red onion (optional)
Instructions:
Assemble the salad: In a large bowl, toss the salad greens with the pomegranate seeds, toasted walnuts, and crumbled goat’s cheese. *simply fry the walnuts in olive oil for a short while - be careful to stir frequently and cook for only 1-2 mins as they burn quickly!
Dress and serve: Drizzle the oil and the balsamic vinegar dressing over the salad and toss gently to coat just before serving.
